Ingredients:
- 1 10 oz. pkg. fresh spinach (washed)
- 5 slices bacon (cooked & chopped)
- 6 green onions (chopped)
- 2 eggs (hardboiled,chopped)
- 1pkg. fresh mushrooms
- 1 cup croutons
Mix all ingredients in a big bowl.
Dressing:
- 1 egg
- 1/2 cup white vinegar
- 1-1/2 tsp bacon fat
- 1/2 cup sugar
- 3/4 tsp. salt
Beat and combine all ingredients in a pan and bring to a boil over low heat, stirring constantly. Cook for a while longer till it thickens some. Refriegerate to cool.
Prepare Dressing at least 3-4 hours ahead of time.
