Chocolate Pecan Squars

Ingredients:

  • 1 1/2 sticks butter, soft (unsalted or don't add the salt)
  • 3 eggs
  • pinch of salt
  • 1 cup chopped pecans
  • 1 box brown sugar
  • 2 3/4 cup self rising flour
  • 1 large bag chocolate chips

Preparation:

Mix all ingredients well in a bowl and pour into greased 13x9 pan. Bake 25 min. at 325°F/160ºC and check. Cool and cut into small squares.

Sour Cream Cookies

Ingredients:

  • 3 eggs
  • ¾ tsp. salt
  • 1 cup margarine ( unsalted or don't add ¾ tsp. salt)
  • 1 cup sour cream
  • 1 tsp. baking soda
  • 2 cups sugar
  • 5 cups flour
  • 1 tsp. vanilla or nutmeg
  • 3 tsp. baking powder

Preparation:

Mix soft margarine and add sugar, also add eggs one at a time and beat well. Then add sour cream and vanille (or nutmeg). In a seperate bowl add flour, baking soda, salt and baking powder. Mix well, then add to first mixture. Chill dough, then roll to 1/2 inch and cut. Makes about 70 Cookies. Bake at 400°F/200ºC for about 12 minutes.

Banana Bread

Ingredients:

  • 3 Ripe Bananas
  • 1 cup sugar
  • 2 eggs beaten
  • 2 cups flour
  • 1 teaspoon soda (disolve in hot water)
  • 1/2 cup shortening (melted)
  • pinch of salt
  • 1/2 cup walnuts

Mix all ingredients together and bake in a loaf pan 350 F. 55 min. to 1 hr.

Zucchini Bread

Zutaten:

  • 3 eggs
  • 1 cup oil
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 cups grated zucchini
  • 3 cups flour
  • 3 tsp. cinnamon
  • 2 tsp. vanilla
  • 1/4 tsp. salt
  • 1 tsp. soda
  • 1/4 tsp. baking powder

Mix all ingredients together in a medium size bowl. Pour into greased loaf pan and bake at 350° for 1 hour.

Chili Cheese Cornbread

Ingredients:

  • 1 cup yellow cornmeal
  • 2/3 cup flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 3/4 cup sour cream
  • 2 eggs
  • 1/4 cup Crisco Oil
  • 1/4 cup shredded cheddar cheese
  • 1 can (8-3/4 oz.) whole corn (drained)
  • 1 can (4 oz.) chopped green chilies (drained)

Heat oven 400°F. and oil 9x9x2 baking pan, set aside. Combine cornmeal, flour, bakingpowder, salt and set aside. Blend sour cream, eggs and Crico Oil in medium mixing bowl. Add cornmeal mixture, cheese corn and chilies. Mix well. Pour into pan. Bake for 30- 35 min. Cool and cut into squares.

Brown Bread

Ingredients:

  • 1/2 cup raisins
  • 3 cups flour
  • 3 tsp. baking soda
  • 1 tsp. salt
  • 1 box brown sugar
  • 3 cupsKellogg's 40% Bran Flakes
  • 3 cups buttermilk

Cover raisins with boiling water and set aside. Measure flour add baking soda and salt. Add baking soda and salt. Add brown sugar and Kellogg's 40% Bran Flakes. Mix well. Add  buttermilk. Drain raisins

 

to other mixture and stir well. Grease 6 No. cans well, fill 1/2 full. Bake 350° for about  1 hour., add to other mixture and stir well. , add

Egg - Nog

Zutaten:

12 pasteurized shell eggs
1 lb. confectioners’ sugar
½ teaspoon salt
¼ cup vanilla
4 cups evaporated milk
2 cups heavy cream
Zubereitung:
Break eggs into large bowl. Beat eggs until light in color. Mix in confectioner’s sugar, salt and vanilla. Add evaporated milk and cream. Blend with egg mixture for 30 seconds. If desired, add in 4 cups dark rum, brandy, bourbon or rye. Cover eggnog closely and let ripen in the refrigerator for 24 hours. Stir again and serve sprinkled with freshly grated nutmeg or other garnishes.

Hot Butterered Rum

Ingredients:

  • 1 lb. butter ( soft )
  • 1 lb.. brown sugar
  • 1 qt. vanilla ice cream
  • Dark Rum
  • 1 lb. (2 -1/2 cups) sugar
  • 1 t.. cinnamon
  • 1 t. nutmeg
  • 1 t. vanilla extract (optional)
  • Boiling Water

Preparation :

Cream butter and sugars by hand or mixer; do not worry about a few lumps of butter. Let ice cream soften a bit. Add ice cream and spices to butter mixture. Freeze until ready to use. For each individual serving : put one very generous (or to taste) T of mix in mug with 1 oz. of rum. Fill with boiling water and stir. Store unused mix in freezer.

Spiced Cider

Ingredients :
  • 1 t. whole cloves
  • 1 t. allspice
  • 1/2 c. packed brown sugar
  •  1 orange (optional)
  •  3 c.. 7 up (chilled)
  •  1 stick cinnamon
  •  2 qts. apple cider
  • 1/4 t. salt
  •  whole cloves (optional)

 

Preparation:

Tie cloves, cinnamon and allspice in small cloth bag. Mix cider, sugar and salt in large saucepan; add spice bag. Heatto boiling. Reduce heat; cover and simmer for 20 minutes. Remove spice bag. Cool to room temperature; refrigerate untilchilled. Stud orange with cloves. Pour cider mixture into punch bowl and serve.

Coffee Punch

Ingredients:
  • 3 qts. water
  • 2 qts. skim milk
  • 2 c. sugar
  • 1 sm. can Hersheys Syrup
  • 1/2 c. instant coffee
  • 1 gal. vanilla ice cream
  • 1/2 t. salt

 Preparation:

Bring 1 qt. water to boil. Quickly stir in coffee, sugar salt and syrup. Remove from heat and add the remaining water. Cool completly. At this point the " base" can be chilled up to 1 week or frozen 2-3 months. When ready to serve, thaw and add skim milk. Cut up chunks of ice cream and float in punch bowl.

This punch is always a big hit at parties and social functions.
