Holiday Gingersnaps

Ingredients:

  • 2 cups sifted flour
  • 1 tsp. cloves
  • 1 tsp. ginger
  • ¾ cup soft shortening
  • 1 egg, slightly beaten
  • ½ tsp. salt
  • 1 tsp. cinnamon
  • 3 tsp. baking soda
  • 1 cup granulated sugar
  • ¼ cup molasses
  • Colored sugar for rolling in

Preparation:

Sift flour, salt, spices and baking soda. Cream the shortening until fluffy; gradually add 1 cup of sugar. Blend in egg and molasses, then stir in flour. Shape into 1½-inch balls and roll in sugar. Place on cookie sheet 3 inches apart. Flatten and sprinkle with more colored sugar. Bake at 350ºF/175ºC for 10 minutes.

Grilled Cinnamon Chicken with Red Pepper

 

Ingredients:

  • 2 cups tomato sauce
  • 1 cup orange juice
  • 4 tsp. onion powder
  • 2 tsp. cinnamon
  • 2 tsp. garlic powder
  • 2 tsp. red pepper, crushed
  • 2 ½ lb. chicken breasts (boned and skinned)

Preparation:

Combine and marinate overnight in refrigerator. Grill for about 3 minuted on each side.

Hot Butterered Rum

Ingredients:

  • 1 lb. butter ( soft )
  • 1 lb.. brown sugar
  • 1 qt. vanilla ice cream
  • Dark Rum
  • 1 lb. (2 -1/2 cups) sugar
  • 1 t.. cinnamon
  • 1 t. nutmeg
  • 1 t. vanilla extract (optional)
  • Boiling Water

Preparation :

Cream butter and sugars by hand or mixer; do not worry about a few lumps of butter. Let ice cream soften a bit. Add ice cream and spices to butter mixture. Freeze until ready to use. For each individual serving : put one very generous (or to taste) T of mix in mug with 1 oz. of rum. Fill with boiling water and stir. Store unused mix in freezer.
