Cookies

Ingredients:

  • 3 eggs
  • ¾ tsp. salt
  • 1 cup margarine ( unsalted or don't add ¾ tsp. salt)
  • 1 cup sour cream
  • 1 tsp. baking soda
  • 2 cups sugar
  • 5 cups flour
  • 1 tsp. vanilla or nutmeg
  • 3 tsp. baking powder

Preparation:

Mix soft margarine and add sugar, also add eggs one at a time and beat well. Then add sour cream and vanille (or nutmeg). In a seperate bowl add flour, baking soda, salt and baking powder. Mix well, then add to first mixture. Chill dough, then roll to 1/2 inch and cut. Makes about 70 Cookies. Bake at 400°F/200ºC for about 12 minutes.

 

Ingredients:

  • 2 sticks margarine (226 g.)
  • 2 cups sugar
  • 2 eggs
  • 15 oz. ricotta cheese (light works)
  • 2 tsp. vanilla
  • 4 cups flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder

Preparation:

Cream margarine and sugar. Beat in eggs and cheese. Add vanilla, baking soda and baking powder. beat till smooth. Slowly mix in flour. Drop by teaspoonful onto greased cookie sheets. Bake 10-12 minutes. Should not brown! Cool before frosting or glazing.

Glaze:

  • ½ lb. powdered sugar
  • ⅛ cup milk
  • ½ tsp. vanilla
  • 3 tbsp. butter

Beat it all together. Add color to your own desired shade. Spread on cooled cookies.

Ingredients:

  • 1 cup shortening
  • 1 tsp. baking powder
  • ¾ cup sugar
  • 1 tsp. baking soda
  • ¾ cup firmly packed brown sugar
  • ½ tsp. salt
  • 3 eggs
  • 1 cup flaked coconut
  • 1 tsp. vanilla
  • ½ cup rolled oats
  • 2 ½ cups flour
  • ½ cup chopped walnuts
  • 1 10 oz. pkg. white baking pieces or 12 oz. vanilla chips

Preparation:

Heat oven to 350°F/175°C. In large bowl beat shortening, sugar and brown sugar until light and fluffy. Add eggs, 1 at a time, beating well after each addition. Add vanilla; blend well. In a small bowl combine flour, baking powder, baking soda and salt. Stir into sugar mixture; mix well. Stir in remaining ingredients. Drop by rounded tablespoonfuls 2 inches apart onto ungreased  cookie sheets. Bake at 350°F/175°C for about 10-15 minutes or golden brown. Cool 1 minute, remove from cookiesheets. Make 5 dozen cookies.
