Appetizers and Dips

Ingredients:

  • 2-8 oz. cream cheese
  • 1/4 cup chopped green pepper
  • 2 tbs. chopped onions
  • 1 tbs. seasoned salt
  • 1  8 1/2 oz. can crushed pineapple (well drained)
  • 1 cup pecans (chopped)

Mix all ingredients together in a bowl (except nuts). mold into ball and roll in pecans. Wrap in plastic wrap and chill until firm. May be fozen for later date.

 
 

Ingredients:

  • 1lb. ground beef
  • 1 lb. pkg. Velveeta cheese, (cubes)
  • 1 (7oz. can) Ro-Tel green chopped chillies
  • Tomatoes (chopped)
  • Beer (to taste)

Preparation:

Brown ground beef. Add Ro-Tel tomatoes. Bring to a boil and simmer. Add Velveeta. Stir contnuously until cheese melts. Serve with white corn tortilla chips.

  • 1 8 oz. pkg. cream cheese(softened)
  • 1 tbs. lemon juice
  • 1 can (16 oz.) salmon (drained and flaked)
  • 1/4 tsp. liquid smoke (Worcestershire sauce can be used)
  • 1 tbs. grated onion
  • 1/4 tsp. salt
  • 1/2 cup chopped nuts
  • 3 tbs. snipped parsley

Mix all ingredients together in a bowl and form a ball. After chilled, roll in a mixture of 1/2 cup nuts and 3 tbs. snipped parsley.

 
 

Ingredients:

  • 1 lb. bulk hot sausage
  • 3 cups bisquck mix
  • 1 lb. extra sharp cheese (grated)

Mix all ingredients. Shape into small balls. Bake on cookie sheet at 375°- 400° for 15- 20 mins. May be frozen before baking. Excellent for coffees or cocktail parties.

 

Ingredients:

  • 1 pkg. cream cheese
  • ¼ cup mayonaise
  • 1 can deveined cocktail shrimp
  • 2 boiled eggs
  • ½ can liquid from shrimp
  • 2 tbsp. grated onion

Preparation:

Mix and smooth cream cheese, mayonaise, shrimp and grated onion together. Add the ½ can of liquid. Mix well. Put ½ the mixture in a casserole dish. Grate 1 hard-boiled egg over it, then add the remainder of the mixture. Grate the second hard-boiled egg on top and cook in the oven 400ºF/200ºC for about 20-25 minutes. Serve hot with the chips of your choice.

Ingredients:

  • ⅔ cup soy sauce
  • 2 cups packed brown sugar
  • 24 chicken drumettes

In a medium bowl mix soy sauce and brown sugar. Arrange drummettes in foil-lined 9x13 - inch baking pan. Pour sauce over drummettes and backe at 300ºF/150ºC for 3 hours, turning drummettes over after 2 hours. Serve warm.

Ingredients:

  • 1 sm.pkg. frozen spinach ( thawed)
  • 1 cup sour cream
  • 1 cup mayonaise
  • 1 pkg. Knorr dry vegetable soup mix
  • 1 can sliced water chestnuts (chopped)

Preparation:

Mix together all the ingredients and chill for 2 hours prior to serving with Tuscan Party Bread. You can also serve with French Baguettes cut into bite-sized pieces.

Ingredients:

  • 1ctn. (16 oz.) sour cream
  • ½ cup mayonaise
  • ½ tsp. lemon juice
  • 1 env. Lipton vegetable soup mix
  • 1 pkg. (10 oz.) frozen chopped spinach (thawed, squeezed dry)
  • 1 can (8 oz.) water, chestnuts (drained, chopped)
  • ¼ cup finely chopped onions

Preparation:

In medium bowl blend sour cream, mayonaise, lemon juice and vegetable soup mix. Stir in spinach, water chestnuts and onion. Chill. Serve in bowl or hollowed-out bread loaf. Great with bread cubes, vegetables, crackers, chips and/or pretzels. Enjoy!

Ingredients:

  • 1 pkg. frozen meatballs( not Italien)
  • 2 bottles cili sauce
  • 1 lg. jar grape jam
  • 2 tbsp. brown sugar( approx.)

Preparation:

In saucepan mix chili sauce, jam and brown sugar. Add meatballs and simmer until done.

Ingredients:

  • 4 oz. cream cheese
  • 5 slices bacon
  • ¼ cup Parmesan cheese
  • 1½ tbsp. chopped onion
  • 1 tbsp. parsley
  • 1 tbsp. milk
  • 1 can flaky biscuits

Preparation:

Preheat oven to 400ºF/200ºC. Fry bacon until crispy. Crumble bacon in large bowl cotaining cream cheese, onion, Parmesan cheese, parsley and milk; mix well. Separate biscuits into 3 layers. Press into mini muffin pans with tart shaper or fingers to form tart shell. Fill each  with 1 teaspoon of bacon mixture. Bake 7-10 minutes or until lightly brown.
