Scalloped Corn

Ingredients:

  • 1 egg (beaten)
  • 1 can cream style corn
  • 1 can whole corn ( do not drain )
  • 1 box cornbread mix  (Jiffy brand )
  • 1 med. onion
  • 1 sm. ctn. sour cream

Preparation:

Stir egg, 2 cans of corn and cornbread mix together in casserole. Saute chopped onion until tender and spread over mixture. Spread sour cream over top of onions. Top with grated cheese. Bake at 350° F ( 175° C) until golden brown, center will be slightly gooey with the edges set. Can be doubled or tripled, etc. without further adjustments.

Great for large buffets or potlucks

Quick Ambrosia Salat

Ingredients:

  • 1cup Rosa Maria noodles (uncooked)
  • 1 cup miniature marshmallows
  • 1sm. pkg. Cool Wip
  • 1 cup crushed pineapple  (drained)
  • 1 cup Mandarin oranges  (drained)
  • 1 cup sour cream

Cook noodles as directed on package, drain and rinse with cold water. Mix together all ingredients in a medium size bowl and cill for 2 hours. Garnish as desired.

Lime Jello

  • 2 small pkgs. Lime Jello
  • 1- 2 can crushed pineapple(drained)
  • 2 cups Boiling water
  • 3/4 cup walnuts (chopped)
  • 1 pt. sour cream

Dissolve Lime Jello in hot water. Cool. Add sour cream, pineapple and walnuts. Chill.
