Csirke Pörkölt - Chicken Stew

Ingredients:

  • 3 lb. chicken (1½ lb. chicken breast, beef, pork, or lamb can be substituted for chicken. Cut into small pieces)
  • 1 medium onion (diced)
  • ½ tsp. garlic powder
  • Water (as neededed or other liquid)
  • 2 Tbsp. shortening or oil
  • 2 tsp. paprika
  • ½ tsp. black pepper


Optional Additions:

  • 1 can beer
  • 1 cup white or red wine
  • 1 large sliced pepper
  • 1 large sliced tomato
  • 1 (8 oz.) tomato sauce
  • Sliced mushrooms
  • Rice
  • Noodles 

Melt shortening; brown the onions (just sauté for meats other than poultry). Take off the heat to add the paprika (which burns easily), meat, and spices along with any additions. Simmer on low to medium heat for approximately 1½ hours, adding liquid when necessary. Stir occasionally. Serve over rice or noodles.

Rice and Beans

Ingredients:

  • 4 to 6 strips of bacon ( diced)
  • 1 can ( 8 oz..) tomato sauce
  • 2 c. rice
  • 1 tbsp. salt
  • 1 sm. onion ( diced )
  • 1 med. size green pepper ( diced )
  • 1 can black- eyed peas
  • 1 tbsp paprika
  • 2 cloves garlic ( crushed )

Preparation:

Cook diced bacon in a large pot until browned, ( don't drain fat), add green pepper and onion, cook slightly. Add tomato sauce, salt, paprika, garlic, and black-eyed peas ( with liquid). Add water, ( fill black-eyed pea can once) and add the rice and cook over low heat until done.

Approximately 30 minutes.

Broccoli and Rice Casserole

Ingredients:

  • 2 boxes frozen broccoli ( chopped )
  • 1 med. onion ( chopped )
  • 1 - 8 oz. jar Cheese Whiz ( or Velveeta Cheese )
  • 5 c. cooked rice
  • 1 can cream of mushroom soup
  • 1 stick butter

Preparation :

Combine thawed broccoli, cooked rice and heat for 3 minutes. Fold under, cream of mushroom soup and cheese. Saute onion in butter and add to rice mixture. Pour into greased casserole dish or a 9" X 13" backing dish. Bake at 350° F ( 175° C ) for 30 to 40 minutes.

Good choice for potluck.
