Tasty Tarts

Ingredients:

  • 4 oz. cream cheese
  • 5 slices bacon
  • ¼ cup Parmesan cheese
  • 1½ tbsp. chopped onion
  • 1 tbsp. parsley
  • 1 tbsp. milk
  • 1 can flaky biscuits

Preparation:

Preheat oven to 400ºF/200ºC. Fry bacon until crispy. Crumble bacon in large bowl cotaining cream cheese, onion, Parmesan cheese, parsley and milk; mix well. Separate biscuits into 3 layers. Press into mini muffin pans with tart shaper or fingers to form tart shell. Fill each  with 1 teaspoon of bacon mixture. Bake 7-10 minutes or until lightly brown.

Mais Brot Füllung / Corn Bread Stuffing

Für 7 pfund Truthahn  (8 pound Türkey )

Zutaten:

  • 1/2 pfund  oder 8 / 10 Scheiben Speck  (Bacon)
  • 1 Tasse Sellerie gehackt
  • 1/4 Tasse Zwiebeln
  • 1/2 Tasse Wasser
  • 3 Tassen grobe Mais Brot Krümmel (Corn Bread Crumbs)
  • 3 Tassen Toast Krümmel
  • 1/2 Tasse Salbei ( Sage)
  • 1 Tasse Hühnerbrühe/ Truthahnbrühe

Zubereitung:

Den Speck in kleine Stücke schneiden und  in der Pfanne leicht anbräunen. Den Speck abtropfen lassen  und 1/ 4 Tasse Fett von dem Speck aus der Pfanne an die Seite stellen. Jetzt in der Pfanne den Sellerie, Zwiebeln und Wasser für ungefähr 6 -7 minuten zugedeckt dünsten. Nun Mais Brot Krümmel, Toast Krümmel,Salbei, Hühnerbrühe oderTruthahnbrühe dazu geben und gut durch schwenken. In ein Auflaufgefäß geben und in den vorgeheizten Backofen 350° F  oder 175 ° C für 30 Minuten backen.

Natürlich kann das Rezept auch verdoppelt werden.

Baked Beans

Ingredients:

  • 3-52 oz. cans pork and beans (drained)
  • 2 pkg. bacon (cook and break into bits,reserve drippings)
  • 2 tbsp. prepared mustard
  • 1 large onion (diced)
  • 1 med. bell pepper (diced)
  • 6 celery sticks (diced)
  • 1tsp. ground cloves
  • 3 tbsp. Worcestershire Sauce

Preparation:

Cook onions, pepper and celery in bacon drippings. When done,drain off as much of the drippings as possible. Mix beans, cooked vegetables, cloves, sauce and mustard. Pour intolarge pan and bake at 325° F ( 160°C) for 1 -1/2 hours. Stir occasionally.

Ideal for parties or picnics.

Spinach Salad

Ingredients:

  • 1 10 oz. pkg. fresh spinach (washed)
  • 5 slices bacon (cooked & chopped)
  • 6 green onions (chopped)
  • 2 eggs (hardboiled,chopped)
  • 1pkg. fresh mushrooms
  • 1 cup croutons

Mix all ingredients in a big bowl.

Dressing:

  • 1 egg
  • 1/2 cup white vinegar
  • 1-1/2 tsp bacon fat
  • 1/2 cup sugar
  • 3/4 tsp. salt

Beat and combine all ingredients in a pan and bring to a boil over low heat, stirring constantly. Cook for a while longer till it thickens some. Refriegerate to cool.

Prepare Dressing at least 3-4 hours ahead of time.
