Quick Baked Beans

 Ingredients:

  • 2-1 lb. cans pork and beans
  • 1 lb. ground beef  (or ground turkey )
  • 1 onion ( chopped)
  • 1 c. mustard
  • 1/4 c. brown sugar
  • salt and pepper to taste

 

Preparation:

Brown ground beef  ( or ground turkey )and onions. Drain. Add it to the beans and the rest of the ingredients. Put it into a greased 2 qt. casserole. Bake at 300° F ( 125° C ) for 1 hour.

Squash Casserole

Ingredients:

  • 4 lg.yellow squash
  • 1 lg. onion
  • 1 jar pimento strip ( optional )
  • 2 eggs
  • 2 scant c. grated cheese
  • 4 tbsp. margarine
  • 2 tsp salt
  • 4 tbsp. sugar
  • 1/2 c. milk

Preparation:

Cook sqash and onion in a small amount of water until tender. Add milk, slightly beaten eggs, cheese, margarine, salt, sugar and pimento. Blend well. Pour into greased baking dish and bake for 35 to 40 minutes at 350° F ( 175° C ).

Serves about 8 People

Broccoli Salad

Ingredients:

  • a bunch of broccoli flowerets (washed and picked)
  • 1 lb. crumbled bacon
  • 1/3 cup green onion
  • 2/3 cup raisins

Mix all ingredients in a big bowl.

Dressing:

  • 1 cup mayonaise
  • 1/2 cup sunflower seeds
  • 1/2 cup sugar
  • 2 tbsp. dark vinegar

Mix all ingredients for dressing in a small bowl. Coat salad and let refrigerate several hours. Toss thoroughly before serving

Spinach Salad

Ingredients:

  • 1 10 oz. pkg. fresh spinach (washed)
  • 5 slices bacon (cooked & chopped)
  • 6 green onions (chopped)
  • 2 eggs (hardboiled,chopped)
  • 1pkg. fresh mushrooms
  • 1 cup croutons

Mix all ingredients in a big bowl.

Dressing:

  • 1 egg
  • 1/2 cup white vinegar
  • 1-1/2 tsp bacon fat
  • 1/2 cup sugar
  • 3/4 tsp. salt

Beat and combine all ingredients in a pan and bring to a boil over low heat, stirring constantly. Cook for a while longer till it thickens some. Refriegerate to cool.

Prepare Dressing at least 3-4 hours ahead of time.

Ice Cream Fudgies

Ingredients:

  • 1 large pkg. chocolate pudding (not instant)
  • 2 3/4 cup milk
  • 1/2 cup sugar

Cook in a midsize pot until thick. Pour into popsicle cups. Cool before freezing.

Pretzel Salad

Ingredients:

  • 2- 3 oz. pkg.strawberrygelatin
  • 2 pkg. frozen strawberries ( partially defrosted)
  • 2 cups coarse crushed prezels
  • 3/4 cup powdered sugar
  • 2 cups boiling water
  • 1/2 cup cold water
  • 3 tbsp. sugar
  • 1-1/2 stick margarine
  • 1 8 oz.. pkg.cream cheese
  • 1 sm. pkg. wipped topping

Preperation:

Dissolve gelatin in boiling water. Add cold water. Add strawberries and set aside to cool. Do not refrigerate. Cream 3 tbsp. sugar with margarine. Add pretzels. Press into 9 x 13 pan. Bake 10 minutes at 350º F (175º). Cool. Blend cream cheese with powdered sugar. Add whipped topping. Spread cream cheese mixture over cooled crust and let firm up in refrigerator. When cream cheese mixture firms, top with strawberry mixture and refrigerate overnight.

Banana and Pineapple Salad

Ingredients:

  •  4-5 bananas (sliced)
  • 1/2 to 3/4 bag miniature marshmallows
  • 20 oz. can pineapple (cut into chunks)
  • nuts

Sauce:

  • 2tbsp. cornstarch
  • 1/2 cup sugar
  • 1/2 cup water
  • 2 eggs
  • drained juice from pineapple

 

Preparation:

Combine cornstarch and sugar in saucepan: mix pineapple juice,water and eggs in a bowl. Then add mixture to cornstarch and sugar. Mix  ingredients thoroughly and cook over medium heat until mixture thickens, stirring constantly. Cook for one minutes, then let cool. Combine all other ingredients in bowl and pour cooled mixture over fruit and mix. Make the same day as serving, not the day before, so bananas will be fresh.

Apricot Cheese Delight

Ingredient:

  • 1 3 oz. pkg. orange Jello
  • 1 can med. size crushed pineapple
  • 1 med. Cool Wip
  • 1 cup chopped nuts
  • 3/4 cup sugar
  • 2 sm. jars apricot / tapioca baby food
  • 1 8 oz. pkg. cream cheese ( diced )

Preparation:

Combine Jello and pineapple in a saucepan. Heat until mixture simmers. Add sugar, baby food and diced ream cheese. Mix well, but do not beat. Chill until thick when dropped from spoon,but not firm. Slowly blend in Cool Wip, but do not beat. Pour into 9 x 12 pan and sprinkle nuts over top. Chill until set.

Hot Butterered Rum

Ingredients:

  • 1 lb. butter ( soft )
  • 1 lb.. brown sugar
  • 1 qt. vanilla ice cream
  • Dark Rum
  • 1 lb. (2 -1/2 cups) sugar
  • 1 t.. cinnamon
  • 1 t. nutmeg
  • 1 t. vanilla extract (optional)
  • Boiling Water

Preparation :

Cream butter and sugars by hand or mixer; do not worry about a few lumps of butter. Let ice cream soften a bit. Add ice cream and spices to butter mixture. Freeze until ready to use. For each individual serving : put one very generous (or to taste) T of mix in mug with 1 oz. of rum. Fill with boiling water and stir. Store unused mix in freezer.

Banana Freeze Punch

Ingredients:
  • 7 c. Water
  • 5 ripe Bananas
  • 1 can(6 oz) Orange Juice concentrate (frozen)
  • 1 l Ginger Ale
  • 3-1/2 c. Sugar
  • 1 can (46 oz ) Pineapple Juice
  • 1 can (6 oz) Lemonade concentrate ( frozen)

Preparation:

Boile water und sugar for 5 minutes. Cool down. Mash bananas in blender using a little pineapple juice to mash. Add mashed bananas and remainder of ingredients exept ginger ale. Freeze. Remove from freezer 2 to 3 hours before serving. mix with gingerale. Assorted fruits may be added as garnish. Vodka can also be added.

Makes about 5 quarts.
